Rum and Cedar Infused Roasted Pineapple

Rum & Cedar Infused Roasted Pineapple

Serves 4


1 Fresh Pineapple

1/2 Cup Brown Sugar

2 Tbs Dark Rum

1/4 tsp Cinnamon

1/4 tsp Anise, ground

2 oz Butter, melted

2 Cinnamon sticks

2 Tbs Star Anise, whole

2 Tbs Cloves, whole

1 Pre-Soaked Untreated Cedar Plank


  • Soak cedar plank in cool tap water for 1 - 2 hours before start time.

  • Pre-heat grill to medium heat (approximately 365 degrees).

  • Peel and core pineapple.

  • Mix all other ingredients together and rub all over pineapple.

  • Place pineapple on the center of the plank, place on grill and close grill top.

  • Cook for 25 minutes, basting pineapple with juices at least 2 to three times during grilling. Mop basting brush on plank to get juices.

  • Remove and carve.

  • Top with vanilla or coconut ice cream if available.

  • Serve.
