Maple Glazed Pork Loin with Caramelized Apples

Maple-Glazed Pork Loin Roast - served with caramelized apples and green beans

Serves 6

1 3-4 lb Pork Loin

2 Tbs Legends Fat Tommy's Grilling Rub or your favorite rub

4 Tbs Maple Syrup, real not imitation

2 Tbs Olive Oil

2 Apples, cored and sliced

3 oz Melted Butter

2 oz Brown Sugar

1/4 tsp Cloves, ground

4 Roma Tomatoes

1 lb Green Beans, blanched

Salt and Pepper to taste

1 Pre-soaked Untreated Cedar Oven Board or Plank

  • Soak cedar oven board in cool tap water for 1 - 2 hours before start time.

  • Rub roast well with Fat Tommy's Grilling Rub, maple syrup, and olive oil. Allow to rest in refrigerator for 1 hour.

  • Mix melted butter, brown sugar and ground cloves.

  • Coat apple slices with approximately 1 Tbs of this mixture and reserve in refrigerator.

  • Pre-heat your oven to 350 degrees.

  • Place pork loin in the center of oven board and put on the middle rack of your oven.

  • Roast approx. 25 minutes per lb, + 25 minutes.

  • 30 minutes before loin is done, add apples along base of roast. Toss tomatoes and beans in remaining butter. Season with salt and pepper, and place around the top of the roast.

  • Continue cooking for 30 minutes or until done.

  • Remove from oven. Rest food on the board for fifteen minutes. Carve and serve.
