Sausage Stuffed Zucchini

Plank Roasted Sausage Stuffed Zucchini

Serves 2-4


2 Zucchini, medium size, approximately 8" long

1/2 lb Italian Sausage, ground

1 Small Onion, diced to 1/4"

1 Garlic clove

1/4 tsp Oregano, dried, whole

1/4 tsp Basil, dried, whole

2 Tbs Sun Dried Tomato, chopped to 1/8"

1 Egg

3 Tbs Parmesan Cheese, grated

1/8 tsp Salt

1/8 tsp Black Pepper, ground


  • Soak cedar plank in cool tap water for 1 - 2 hours before start time.

  • Place sausage in a saute pan over medium heat, cook for 2-3 minutes, until lightly cooked, add onion and garlic and cook until translucent. Add sun dried tomato, basil and oregano. Lower the heat, cook until onions and garlic are cooked through. Remove from the heat and cool slightly.

  • Pre-heat grill to medium heat (approximately 365 degrees).

  • Cut zucchini into 3/4" pieces. Remove inner flesh, keeping a 1/4" rim around the edge, and on the bottom. Sprinkle zucchini cups with the salt and pepper to taste.

  • In food processor add sausage mix, egg and 2 Tbs of parmesan cheese. Pulse to blend, DO NOT PUREE! Remove, and stuff in the zucchini cups. Top with remaining grated parmesan cheese.

  • Add zucchini cups to plank, place on grill and close grill top. Cook for 15-18 minutes or until top is slightly browned.

  • Garnish with fresh herbs, celery and serve.
